When I laid out the spread for our Club Mit sandwiches the other night, I completely forgot to include the three avocados I had been carefully ripening for the occasion. That's a lot of avocado to use up quickly.
Then I saw a show on the Food Channel called The Best Thing I Ever Ate. One of the talking heads described a guacamole recipe with sage, bacon and blue cheese. It sounded just crazy enough to be amazing.
And it was, on a French roll with turkey and mayonnaise. Beth, Angie and I glopped huge amounts of it on the sandwiches. And luckily I found 1/3 of a bag of Fritos in the cupboard to take care of the rest of the guac. What a guac-fest! It's a healthy fat, right?
