Meatball Sandwiches are Delicious

Of course they are! It's been a while since we had the Meatball Sandwich Night. As I recall, we were celebrating the season premier of Heroes...why, I do not know. That show has gone beyond ridiculous. Luckily Karen re-read a bunch of recaps from previous seasons so she was able to remind us how the heroes got to where they are. Karen, Kate, Angie, Robynne and Sandwich Night newbie Dawn came over.We got the glasses to watch Chuck in 3-D, but forgot to watch it until the end. Kate and Beth look cute, though. And I like how the handlebars of the stationary bike make it look like Kate's wearing a fancy hat.Karen brought her kittens, Dulce and Beau. They were more entertaining than television, of course. Unless you were Sam the Cat, who did not approve of animals in the house. Growl. Hissssss. Growl. But wait, isn't this a blog about sandwiches? It is! The meatball sammies were delicious! Beth made the meatballs from a recipe she found online years ago. You add parmesan cheese, bread crumbs, wet wheat bread, parsley, garlic, red wine, salt and pepper to ground beef and pork. Then we brown them in a pan and let them cook in red sauce for a good long time. We usually cook it for a few hours, then cool the whole thing overnight, then cook it some more the next day.
To make my perfect meatball sandwich, you must start with garlic bread. Mmm....I spread the rolls with garlic butter and toasted them in the oven. Then we added the meatballs, sauce, mozzarella, provolone, and parmesan cheese. The assembled sandwiches went back into the oven to heat through and melt the cheese. For condiments I had giardiniera pickles and homemade pickled jalapenos. The giardiniera were superior, but mostly because I pickled the jalapenos in cider vinegar so they were weirdly sweet. They'd be good on bahn mit, though!
